Ingredients needed: 1 box of elbows macaroni pasta 8 ounces of grated cheddar cheese 8 ounces of grated mozzarella cheese paprika salt and pepper bread crumbs margarine or vegetable oil 3 eggs 1/2 can of evaporated milk Pour content of pasta into a pot of boiling hot water. Allow pasta to come to a full boil, but not overcooked. Drain most of the water from the pot, leaving just a little to keep pasta from scorching. Place pot with macaroni over low heat, and stir in 3 stick of margarine, a teaspoon of salt and pepper and a half can of evaporated milk. After the liquid begins to simmer, add 3 eggs, and continue to still until eggs appear to cook. Turn off heat. Preheat oven at 360 degrees faren. Mix half the cheddar cheese with half the mozzarella cheese, put the remaining half of the cheddar cheese into the pot and keep stirring. After the cheese is even mixed, pour entire contents from the pot into a medium sized casserole dish in layers, i.e. pour in a small amount of macaroni, then layer it with mozzarella, pour in a bit more then layer it with cheddar, repeat this layering process until you reach the top of the casserole dish, then spread the entire content of mixed mozzarella and cheddar cheese on top. Place dish into oven at 360 degrees Fahrenheit, after 10 minutes, sprinkle bread crumbs over melted cheese, and top it with sprinkles of paprika for garnish, allow to bake 7 more minute or until cheese is completely melted. Of course southern traditions, passed down thru the family no matter where they live now. And yes, I am a Georgia Peach. Today I will also cook some collard greens and corn bread, but I don't have a recipe for it, I just do it by heart.
