A longtime ago I had something called Guinea Chick( same thing?? )my Grandma cooked it ..can't remember the texture as I was in my pre-teens but she did treat it like chicken..incidentally I don't see many Guinea fowl/chicks growing up in Jamaica so it may have been rear even then.

Never tried it, but I did try pigeon before in Egypt. They stuffed it with some type of seasoned rice, it also tasted like the dark meat of chicken. Other 'odd' foods that taste like chicken that I've tried, are frog legs and rabbit meat.

Well i ate the pigeon in Egypt too and the Duck, both of them good. This Guinea Foul didn't fly with me though. It looked ok when i cleaned it, seasoned it and tossed it on the rotisserie. SO far I have made about 10 or 15 chickens on my rotisserie, and even a few Cornish hens and I ALWAYS over cook them. Over cooked to the point where the skin is nice and crispy, that is how we like it.
This thing came out TOUGH. I had issues separating the legs off the foul even though I have a really really sharp knife. After I finally got everything cut it was too tough, about as tough as rubber (literally). I assume that this is an indication that the animal has been killed incorrectly. Either that or I just cooked it too long too fast. Based on the size of the bird and the heat that the machine puts out I think it was just cooked too long and too fast. (The same thing happened when I tried to cook some Camel) LOL

LoL @ tough as rubber, sounds like you need to stay out of the kitchen . This is one of the reasons I don't like duck, it's also very tough as well. Someone suggested that I try cooking it like I would cook as turkey, by baking it for several hours, with an oven bag filled with season, and I heard that it will melt in your mouth. Maybe you should try this with the Guinea foul.

You should also try the quail, they stuff it with a rice like grain called freek. Frogs legs are disgusting, but rabbit really does taste like chicken. They make that really nice in Egypt too. As far as guinea foul goes,..... I buy them from time to time...... Maybe I should actually cook one for a change....

Where is Hussain, is it in Cairo or Luxor, because I tried it in Luxor, at some hole in the wall, whose name I don't remember. They also tricked me into eating Rabbit as well, lol. I was almost finished by the time I learned my "dark chicken" was actually Rabbit meat. (Things I never would have tried in America, when I think about it. I'm also one of those type that don't like to see the eyes of the fish when I'm about to eat it, and the Egyptians serve it with the eyes still in tact. I requested that they please cut the head off, as I didn't like the fish staring back at me, lol.

This place is in the street when your leaving the khan where all the taxis are waiting right off shari al azhar. I never had rabbit either but I've always been curious. There's a restaurant near Ezbekiya called Alfi Bey that has good food so I had it there. The only place I feel safe eating fish is in Giza right across the street from the Mena House at the end of Pyramid street where it turns the corner. Its called Cristos and they give you a S&*^ load of food. My favorite is called arous. I don't mind the eyes, but what i really hate is the way they do fish in Alexandria. They coat it with a grain called radda and basically burn it to a crisp till the outside is charcoal. DISGUSTING!
